Peanut Butter Biscotti

Ingredients:

2 3/4 cups flour
1 3/4 cups sugar
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs, beaten
1/3 cup peanut butter
1/4 cup water
1 1/4 cups roasted peanuts, unsalted
Directions:

1. Preheat oven to 350 degrees.
2. In large bowl, mix flour, sugar, baking powder and salt.
3. In separate bowl, beat eggs, peanut butter and water. Add to flour mixture. If too
dry, add a bit of water (a little at a time). Stir in peanuts.
4. Form 2 logs, 3 inches in diameter. Flatten logs. Bake for about 30 minutes (until
light brown).
5. Turn oven to 300 degrees. Let logs cool for 10 minutes and cut 3/4" thick. Place
bars cut side down on cookie sheet and bake for about 20 minutes.
