Chocolate Molten Cake

Ingredients:
4 oz. butter
6 oz. chopped bittersweet chocolate
2 eggs
2 egg yolks
1/4 cup sugar
pinch of salt
2 Tablespoons flour
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 450 degrees.
2. Melt butter and chocolate in a double boiler and stir until
smooth.
3. Whip eggs and egg yolks in a mixer with sugar and salt until
thick and pale. Add flour and vanilla to the mixture and mix well.
Fold egg mixture into the chocolate.
* Can store in refrigerator, if necessary. Wrap in plastic. Then bring
to room temperature.
4. Grease ramekins with butter and put small circles of parchment
paper on the bottom. Grease the top of the parchment paper.
5. Fill ramekins with batter.
6. Bake 8-10 minutes.
7. Invert onto plates
Serve with whipping cream and raspberry coulis.
